Pam’s Pudding (using chia seeds)
1/2 cup of canned unsweetened coconut milk
1 1/2 tablespoons of chia seeds ( health food store item)
½ teaspoon vanilla
Sprinkle of cinnamon
1 tablespoon raw honey (or more to taste)
1-2 tablespoons of raw cacao powder ( health food store item)
Option to cacao powder> (can use chocolate cocoa powder )
1 tablespoon of flax oil (optional)
Mix all of the above ingredients with a wisk until blended & a creamy consistency. Then chill for 4 hours or overnight in the refrigerator.
Then you can add any of the following: Chopped almonds, cashews. Seeds of: sunflower, hemp, pumpkin, sesame, frozen fruit topping, any juice of your choice. If you want a thicker pudding add more chia seeds. Most of all have fun making it.
This pudding is delicious & very nutritious, a good protein source, and keeps the bowels moving regular and freely.
